Slow Cooker Beef & Broccoli
- 1 pound boneless sirloin, cut into thin strips
- 1 cup low-sodium beef broth (or dissolve a beef bouillon cube in one cup boiling water)
- 1/2 cup low-sodium soy sauce
- 1/3 cup honey
- 3 Tablespoons minced garlic
- 2 Tablespoons cornstarch
- 1 Tablespoon sesame oil
- 1-2 pounds fresh or frozen broccoli
Stir together all ingredients except broccoli in a large slow cooker. Cook on LOW for 5-6 hours. Stir in broccoli and continue cooking for another hour, moving heat to high if using frozen broccoli. Serve over hot cooked rice.
Note: You can add broccoli at the beginning of your cooking time, but if you like the veggies to be a little on the crunchy side, add them at the end.
